Montepulciano d'Abruzzo Divus by Ciavolich was first produced in 1987 and is a proud representation of the oldest vineyards on the estate. The grapes, after being selected and harvested by hand, are taken to the cellar where they are crushed and destemmed. The must ferments in temperature-controlled stainless steel tanks and then undergoes délestage (délestage is a delicate phase which consists of completely emptying the tank of the fermenting must, which is then sent to a support tank to ensure oxygenation) and pumping over. The wine obtained is decanted several times into large barrels and barriques where it ages for about a year, followed by a further period in the bottle.
Ciavolich's Montepulciano d'Abruzzo Divus is a ruby red color with soft violet reflections. The nose is a mixture of youthful, evolving aromas, with notes of blackberry and raspberry jam that are characteristic of this varietal, as well as spicy notes such of licorice and black pepper. In the mouth it is robust, warm, and quite soft but with a pronounced tannic texture and a good minerality with a long finish. Perfect with scottadito lamb, as well as with aged sheep cheeses.
